Motivation:
We study quantum gases in which interactions are strong enough that the usual mean-field picture breaks down. Ultracold dysprosium gives us two handles most cold-atom platforms lack: interactions that can be switched with light on a sub-microsecond timescale rather than with magnetic fields, and a magnetic moment large enough that long-range dipolar forces compete with contact interactions. We use these to ask how correlations between atoms emerge and evolve in time, and what phases of matter appear when interactions are strong, long-ranged, or both.
